This high-altitude coffee hits the roasting drum hard with lots of heat to ensure uniform expansion and caramelization. Coupled with a moderate roast development phase but short overall roasting time maintains its nuanced characteristics.
Delicate with notes of vanilla, citrus and a rose blossom finish.

Incahuasi was established in 2005 amongst the towering mountains and breathtaking valleys of the South Peruvian Andes near Cusco. Now totalling 385 member farming families, this organization represents 7 small isolated communities, many of which are at least a half day's mule ride to the nearest road. This relative isolation has ensured a strong sense of tradition where connection with the Earth and community are unquestionable aspects of every day life. The "aini" principle of work is still maintained in Incahuasi where each farmer helps the other farmers in their community with harvest, pruning, and other big jobs like spreading compost. This ensures a little of everyone's blood, sweat, and tears can be found on each individual farm. This is the first year that Just Us! has purchased coffee from Incahuasi and we are very excited for a long-term and fruitful relationship with them for years to come.
